Aloo Poshto / Potato with Poppy Seeds / Aloo Posto


Aloo Poshto is a Bengali cuisine, served with other curries over bed of rice. It is prepared with poppy seeds, chillies and other dry masalas with potatoes and served hot.

Ingredients

Potatoes 3-4, peeled and chopped
Poppy seeds (khus khus) 3 tbsp, roasted
Green chillies 3-4, chopped
Cumin seeds (jeera) 1 tsp
Turmeric powder (haldi) ½ tsp
Dried red chillies (sabut lal mirch) 3-4
Salt to taste
Fresh coriander leaves (dhania leaves) for garnishing              
Water ½ cup for cooking
Oil for cooking

Method

Grind the roasted poppy seeds and green chillies into a paste with some water.

Heat oil in a pan deep fry the potatoes till they turn golden brown and keep aside.

In another pan heat 1½ tbsp of oil and add the cumin seeds, turmeric powder and dried red chillies, sauté, let it crackle. Now add the poppy seed paste and salt. Cook for another 2-3 minutes.

Now mix in the potatoes, pour ½ cup of water and let it simmer for 7-8 minutes.
Garnish with freshly chopped coriander leaves and serve hot.
