Vegetable Do Pyaza is an exotic north Indian delicacy. It’s rich and loaded with vegetables of all kind. It is prepared with marinated veggies and cooked in onion, fresh cream gravy. Tastes really good, a true lip smacking dish, goes well with any rice preparation or flat Indian bread.

Ingredients
Onion 4 large
Mixed vegetables 250 gms (carrot, peas, potato, cauliflower, beans, cabbage, capsicum), cubed
Cottage cheese (paneer) 50 gms, fried
Fresh yogurt /curd (dahi) 3 tbsp
Fresh cream ¼ cup
Ginger garlic paste 1 tsp
Cumin seeds (jeera) ½ tsp
Coriander powder (dhania powder) ½ tsp
Turmeric powder (haldi) ¼ tsp
Tomato sauce 1 tbsp
Salt to taste
Garam masala powder ¼ tsp
Black pepper powder (kali mirch powder) 1 pinch
Cinnamon (dalchini) 1” long stick
Bay leaf (tej patta) 2
Cardamom (elaichi) 2
Cloves (lavang / laung) 2
Oil 3 tbsp for cooking
Lemon juice ½ tsp
Sugar ¼ tsp
Coriander leaves (dhania leaves) 1 small bunch, finely chopped, for garnishing
Method
Prepare a marinade by mixing salt and black pepper powder mixed in curd, mix cubed vegetables in this mixture and leave it for marination for 1 hr.
Cut 2 onions length wise and fry it in hot oil, till it turns brown, keep aside.
Coarsely grind the remaining onions to paste.
Heat oil in pan; add in cinnamon, bay leaf, cardamom, cloves and cumin seeds. Sauté for a minute and add in ginger garlic paste sauté well.
Add in coarsely ground raw onion paste and sauté till it turns light pink. Add in all the dry masalas and salt. Pour tomato sauce and cook till the oil starts leaving the sides.
Add in all the vegetables, cover it with lid and cook till the veggies are done.
Finally add in fried cottage cheese, fried onions, and cream. Pour lemon juice, sugar, mix gently, garnish with coriander leaves and serve.
Veg do Pyaza goes well with naan, biryani or any rice preparation.
