Special Vegetable Jalfrezi


Vegetable Jalfrezi, is easy to make stir fried vegetables. They go well with noodles or with fried rice. They are simple easy to make and can be prepared in jiffy with simple ingredients available at home.

Ingredients

Carrot 2, peeled, cubed
Potatoes 2, peeled, cubed
French beans 50 gms, cut into ½” long pieces
Capsicum / Bell pepper (Shimla Mirch) 1 medium, cubed
Onion 1 large, cubed
Tomato 1 large, deseeded and cubed
Ginger garlic paste ½ tbsp
Cumin seeds (jeera) 1 tsp
Turmeric powder (haldi powder) 1 tsp
Red chilli powder (lal mirch powder) ¼ tsp
Dried red chillies 5-6
Coriander powder (dhania powder) ½ tsp
Vinegar 2 tbsp
¾ cup oil
Salt to taste
Water for cooking

Method

Boil all the vegetables except onions and tomatoes in hot boiling water for 2 minutes, strain and keep aside.

Meanwhile heat oil in a pan, sauté onions and the boiled vegetables on high, keep aside.

In another pan, heat 2 tbsp of oil add cumin seeds, dried red chillies, sauté for 30 secs, add ginger garlic paste, add in all the dry masalas, salt and tomatoes, stir quickly. Pour in vinegar and finally add in the fried vegetables, stir quickly and serve hot with noodles or with Chinese fried rice.
