Khoya Makhane is interesting recipe from the central India. A mouth watering usual delectable recipe, loaded with goodness of kernel of gorgon nut, popularly known as makana in India. Its good for kids, taste good and healthy.

Ingredients
Khoya 100 gms
Puffed kernel of Gorgon nut/ fox nut (makhana) 50 gms
Onion 2 medium, coarsely ground
Tomatoes 2 medium, pureed
Ginger- green chilli paste 1 tsp
Brown cardamom (badi elaichi) 1
Cinnamon (dalchini) ½” piece
Red chilli powder (lal mirch powder) ½ tsp
Coriander powder (dhania powder) ½ tsp
Garam masala powder 1 tsp
Fresh cream ½ cup
Fresh curd (dahi) 2 tsp
Oil 3-4 tbsp
Water for cooking
Salt to taste
Coriander leaves (dhania leaves) 1 small bunch, finely chopped
Cheese 1 cube
Method
Heat little oil in pan, fry makhana’s, and keep separately. In another sauté khoya till it turns pink in color, keep aside.
Heat oil in pan; add ginger-green chilli paste, onion and sauté till it turns golden brown in color. To this add the sautéed roasted khoya and tomato puree and fry till the oil leaves the sides. Coarsely grind brown cardamom (badi elaichi) and cinnamon (dalchini) and add it to the above mixture.
Add in all the dry ingredients and masalas, mix well. Add in fresh curd, fresh cream and ¼ cup water and bring it to boil.
Finally add the fried makana’s, garnish with fresh coriander, grated cheese and serve hot.
