Bharwan (Bharvan) Baingan / Stuffed Brinjals / Stuffed Eggplant


Bharwan baingan translates into stuffed brinjals. An irresistible delicacy, a true gourmet treat. The brinjals are stuffed with mixture of onions, tomatoes, peanuts and sesame seeds cooked in dry masalas and finally shallow fried.

Ingredients

Eggplant / Brinjal (baingan) 250 gms, small
Onion 3 large
Tomatoes 3 medium sized
Peanuts (moongphalli) ½ cup
White Sesame seeds (white til) ¼ cup
Red chilli powder (lal mirch powder)  2 tsp
Coriander powder (dhania powder) 2 tsp
Garam masala powder 2 tsp
Turmeric powder (haldi) ¼ tsp
Oil ¼ cup
Salt to taste
Ginger garlic paste 3 tbsp

Method

Grind together onion, tomato, peanuts, sesame seeds in mixture to make a smooth paste, keep aside.

Heat oil in pan add in ginger garlic paste, add in the paste and sauté till the oil starts leaving the sides.

Add in all the dry masala, salt and mix well, let this mixture cool.

Wash, clean the brinjals (baingan) and slit it center, so as to get quartered shape. Stuff in the filling and keep aside.

Heat oil in pan; gradually drop in the stuffed brinjals (baingan). Gradually turn the brinjals, ensure that the stuffing doesn’t come out. Cook over low for 10-15 minutes, turning occasionally. Add water if desired, garnish with fresh coriander leaves and serve with naan, parathas or chapatti.
