Phirni / Sweet Rice Pudding


Phirni is sweet Indian dessert from the north Indian platter. It is served chilled after hearty Indian meal. It is prepared with rice flour, sugar, milk and is loaded with dry fruits.

Phirni / Sweet Rice Pudding




Category- Vegetarian

Ingredients

Milk 250 gms
Rice flour 2 tsp
Sugar 2 tbsp
Almonds (badam) 2 tbsp, chopped
Pistachios (pista) 2 tbsp, chopped
Green cardamom (hari elaichi) 2, crushed

Method

Heat the milk in a pan till it comes to a boil, let it simmer for a while. Add the rice flour while stirring continuously, so as to avoid lumps.

Add sugar, continue stirring till the milk, rice mixture begins to thicken. Add in the chopped dry fruits.

Take individual serving bowls and pour the mixture into them. Garnish with chopped dry fruits and crushed cardamom and refrigerate for 2-3 hours before serving.
