Thatai is a popular dry snack from Tamil Nadu. The similar preparation is known as chekkalu in Andhra. It is made with rice flour and Bengal gram flour with peanuts and masalas.
Crunchy Papdi / Thatai / Chekkalu
Rice flour 2 cups
Water 2 cups
Bengal gram (chana dal) 4 tbsp
Groundnuts/ peanuts 3 tbsp (coarsely ground)
Red chilly powder 1/ tsp
Green chilies 4-5 (ground to paste)
Salt to taste
Oil for frying
Mix all the ingredients thoroughly and make dough by adding water. The dough should neither be hard nor soft. Make small balls place each ball in between plastic sheets and press it flat. Deep fry the pressed flat round papdis in heated oil. Remove excess oil in tissue paper. Store it in air tight containers.
