Vegetable Egg Curry / Vegetable Anda Curry


For all the vegetarians who have been longing to try the popular Indian egg curry. Here is the vegetarian version. The vegetarian are eggs prepared with cottage cheese, rice and khova. While the luscious gravy is prepared with onions, tomatoes, cream, curd. The curry so rich while the eggs so succulent to the core.

Ingredients

For Eggs-

Cottage cheese (paneer) 1 cup, grated
Cooked rice 1 cup
Corn flour 1 tbsp
Khoya /khova/mava 50 gms
Salt to taste
Garam masala 2 pinch
Yellow food color 1 pinch

For Gravy

Onion 5 medium sized
Fresh curd (dahi) ¼ cup
Fresh cream ½ cup
Tomato sauce ¼ cup
Tomato puree ¼ cup
Ginger garlic paste 1 tsp
Turmeric powder ¼ tsp
Garam masala powder 1 tsp
Red chilli powder (lal mirch powder) 1 tsp
Khoya /khova/mava 50 gms
Salt to taste
Sugar 1 tsp
Monosodium glutamate ¼ tsp
Chilli sauce 2 tsp
Milk ½ cup
Lemon juice 1 tsp
Orange food color few drops
Cheese cube 1
Fresh coriander leaves (dhania leaves) 1 small bunch
Oil or butter for cooking
Water for cooking

Method

Vegetarian Egg Preparation-

In a mixing bowl mix khova a pinch of salt and garam masala, yellow food color, mix well make small balls of it and keep aside.
Mix grated cottage cheese (paneer), cooked rice and corn flour for outer covering of the vegetarian egg.

Place the yellow khova balls in centre and make white egg oval balls resembling boiled eggs, shallow fry these prepared egg balls in hot oil and keep aside.

Gravy Preparation-

Cut onion length wise and boil in hot water, strain and keep aside. Once the boiled onion cools and appears transparent, grind it in mixer, and keep aside.

Heat oil or butter in pan add ginger garlic paste and the prepared onion paste; fry till the oil starts leaving the sides.

Add in all the dry masalas, tomato sauce and puree, cook over low flame till the oil separates. Add in khova and beaten fresh curd. Add in fresh cream and salt to taste, sauté and cook till the gravy becomes thick.

Add in sugar, monosodium glutamate, chilli sauce and mix well. Add milk in between, keep stirring. Finally pour in lemon juice and orange food color and bring it to boil.

Serving-

Place this gravy in serving dish, cut the prepared eggs open from the center. Grate cheese cube, garnish with fresh coriander leaves and serve with rotis or rice.
